Microgreens have a very high nutritional value! According to the USDA, microgreens contained considerably higher levels of vitamins and carotenoids—about five times greater—than their mature plant counterparts. They are baby vegetable greens harvested once the cotyledon leaves have developed and depending on the variety may be left to continue to grow until one or more set of true leaves appear. The stem is cut around .5 inch above the grow media line during harvesting. Typical harvest size ranges from 1 to 3 inches long which includes steps and leaves
